Acai Bowl with Amafruits. Delicious and nutritious!

It has been a long time since I have written about my love for Acai bowls.  With the temperatures heating up and my running increasing it is the perfect cold treat for a post-sweaty run.  Nothing is more refreshing than a cold acai bowl sprinkled with flavorful granola and some fresh fruit.  In addition to being refreshing, it  is the perfect post workout meal.  It is loaded with anti-inflammatory phytonutrients to help the body recover and reduce inflammation post workout.

I received a sample of Amafruits acai packs along with a few other of their interesting fruit packets that I had never heard of before (more to come on those later) and I was excited to get creating.  Amafruits acai is unsweetened, made with no artificial ingredients, no preservatives, and no cheap juice fillers.  It is the purest form of the product you can find, think straight from the rainforest to your house packed with super antioxidants.

Some facts about acai berries:
*packed with 16 different types of antioxidants
*a protein profile similar to an egg
*high in dietary fiber
*high in omega fatty acids
*contains 10 vitamins and minerals, including; A, B, C, E , calcium, magnesium, and zinc.

Taste: 
Acai has a tropical taste to it, a little berry like,  a little grainy, refreshing and rich in flavor.  

I used the packets to create an acai bowl for you today but I enjoyed one last night as a frozen treat, straight from the pack like a popsicle and Ryan enjoys his in smoothie form.  The possibilites are endless:-)


Acai Bowl w/ Coconut Water Topped with Granola, Coconut, & Banana

 

Recipe
(makes 1 large serving or 2 smaller servings)
2 packets unsweetened pure Amafruits acai
1/4 cup unsweetened coconut water
1 Tbsp honey

Toppings:
1 banana
2 Tbsp unsweetened coconut flakes
1/4 cup granola of choice (Milk and Honey Rick Bayless's Mexican Granola)

Directions: 
Blend frozen acai packs, coconut water, and honey until smooth consistency of your liking.  I like mine to be thicker than a slushy, so it's a quick blend for me.  Pour frozen acai mixture into a bowl and top with your favorite fruits, nuts, or granola.

Have you had a Lychee?

If you haven't had a lychee you are missing out!  I first discovered these little fruits a few years ago while having a martini.  I was out to sushi at my favorite spot and saw someone drinking one and decided to go for it.  It is sweet, delicious, and slightly fragrant.  Once opened they have the consistency almost like a maraschino cherry.  
Lychees are a great source of Vitamin C, packed with more than an orange, as much dietary fiber as an apple, and loaded with potassium. Today's snack was a cup of lychee, it tastes like candy to me!
To eat them, take a paring knife and gently slice it open and remove the shell.  Inside the lychee will be a seed, so you can cut or bite it in half to remove or eat and spit (ladylike, right?).

Lychee martini or sorbet anyone?
